Ok Members,
Looks like the weather is going to be great and the wave report is looking good to. I happen to go to Gold Coast yesterday morning to check out the parking for all of us. Well she told me that we could get 20 boats in the parking lot and no way we can get 20 boats in there lot. So when you pay your enetry fee tomarrow morning I will let you know what to do. If we all can do this together it will work. We have to make it work or I just don't know what to do. Well here is your wave report for Sunday.

Caz, I've never smoked turkey legs before but all the legs from mature birds that I've cooked end up tough as leather. I don't think smoking them would help. But I bet with the right brine, smoking them would give them a great flavor.
Here's what I do with my turkey legs that we roast in the over. I cut the meat from the bone and grind it up in a food processor or blender. Add some mayo, copped celery, onions, lettuce and it makes a great turkey salad spread for sandwhiches. If you smoke it and it comes out to tough, try this and it might be good. Let us know how it turns out either way?
Ya I know they get pretty tough smoking them. But I still like to eatem up that way. I was thinking about putting them in the pressure cooker and then doing something with them also.

Well my best friend did it again today. She found my dads turkey that he shot with his crossbow for him.

Well after working third shift last night. I went straight home to see if my dad happen to shoot his turkey for this year. When I went into the house there was my dad and he told me that he finally hit a turkey with his crossbow. After missing three time this year he finally hit one. So then we took a trip in the woods around the back of my house to see if we could find any blood. He showed me where he hit the turkey and then we started to go find some blood. About ten yards from where he happen to shoot it we was on the blood trail. We tracked this turkey for about 20 yards and lost the blood. After looking in the woods for a half an hour, I went back home to get my German shorthair to see if she could find the turkey. I took her at the end of the blood trail and let her sniff around. She was wondering around for about 5 minutes and headed for the swamp grass. As we watched my best buddy in the swamp grass looking around, she started to point at something. It was really cool, She stayed really still on her point. As I started to walk up to her. Then the turkey tried to get up and fly away. My dog then jumped right on top of the big turkey and held it down for me till I could help her out. Well my dad finally shot his first turkey with his new cross bow.

Well here is my best friend that will allways do what I like to do. She loves to fish with me and as soon she shes me with my hunting cloths on she is right behind me. The bird hunting around my county isn't to good because lack of property owners letting hunters hunt. But I do take her out bunny hunting and when I shoot a deer and have a hard time finding it she will help me out and sometimes will find it. But stay away from her when she finds a rabbit, she will not give it up because its hers now. It sucks because she is going on 12yrs and its going to be the hardest thing Ill have to do when I have to put her down.

I like to keep the heat around 170-200 deg. F. and for a 12 lb turkey the cooking time is around 4-5 hours. I cook it till the inside temp of the bird is around I think its 148 or 168 degs. F. I'll have to look it up again. I only add the wood for smoking in the last 2 hours of the cooking time. I smoked my wild turkey 2 years ago and that was a 19 lb bird dressed out and it took around 6-7 hours.

What I will be smoking is turkey legs. How long do you think I will have to leave them in the smoker for. I have been smoking alot of fish in it, but never had tried turkey yet.

For the last 2 years I have been smoking up turkeys for our thanksgiving lunch here at work and what I have been doing is brining the turkey in apple juice for a day to 2 days and than smoking them with apple wood. They have been turning out nice and tender with a good flavor.
Just one idea.

I have a propane smoker, how hot to you run the smoker and how long do you smoke the turkeys?

Hello Members,
I have been saving my wild turkey legs and have few more turkey legs from some friends that have taken there birds to. What I like to know is? Can someone give me a good brine recipe so I can leave my turkey legs in the fridge over night. I also have a nice propane smoker that I like to smoke them up my self. Is there anyone here that can help me out.

Yes I did get that bird where the area you and I hunt. I been seeing alot of birds there and herd alot towards your woods. Last Friday morning I had a coyote chase off my turkey from your property by the dump. Well lets say he will not be around no more.
Also when I was driving to my parking spot Saturday morning. I seen 12-16 coyote pups in the road running around. We may have a problem with coyotes this year.
