I doo this with all "Big Lake Fish".
Cut into 1" X 1" chunks (At this point you've fished and cleaned fish so...close is OK ) Bring 3 Quarts of water with 1/2 c sugar and 1/2 c salt to a ROLLING BOIL!! Add chunked fish cover and remove from heat for 15 minutes.
After 15 minutes you can eat, however I like to put it under the broiler for 5 minutes with Parmesean. Sprinkle a little Old Bay and it's allll goooood..
