Blackened Lake Trout or Coho

This is a great recipe for those smaller fish that don't provide the big salmon steaks.  The recipe calls for Lake Trout, but I used Coho and it turned out great.  I was cooking over propane and to get the blackened effect I ended up slipping it under the oven broiler for the last 15 degrees. 


I used Chef Paul's blacked redfish seasoning.
